Marinated Pork & Pineapple Kabobs

I recently discovered that pineapple is an amazing tenderizer for meat! After briefly marinating these kabobs in a mixture of pureed fresh pineapple and some other yummy stuff, the pork was almost falling apart it was so tender. I can’t wait to try it on some other cuts of meat after how well these Marinated Pork & Pineapple Kabobs turned out! So tasty. 🙂

Pork & Pineapple Kabobs

Marinating the pork in pineapple makes the meat SO tender! Try out these flavorful Marinated Pork & Pineapple Kabobs this summer.

Pork and Pineapple Kabobs on 100 Days of Real Food

Ingredients

For the Marinade

  • 1 cup chopped pineapple chunks
  • 4 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 jalapeno, minced
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt

For the Kabobs

  • 1 1/2 pounds pork tenderloin, cut into 1″ to 1 1/2″ chunks
  • 1/2 fresh pineapple, cut into 1″ to 1 1/2″ chunks (eat or save the rest after cutting some up for the marinade!)

Instructions

For the Marinade

  1. Puree the cup of pineapple chunks (remember to save half of the pineapple for the kabobs), olive oil, garlic, jalapeno, cumin, oregano, and salt in a food processor until smooth. Set aside.

For the Kabobs

  1. Place the pork and pineapple chunks in a large zip lock bag. Pour in the marinade and rub it around to coat. Refrigerate for a few hours. Pineapple tenderizes the meat quickly so that’s all it needs!

  2. Preheat a gas grill to medium-high heat, around 425° F (or prepare a charcoal fire).

  3. Thread the pork and pineapple chunks onto skewers in alternating order. Place the kabobs on the grill and cook for 5 to 6 minutes per side, until the pork is done all the way through (no longer pink in the middle). Do not overcook.
